Minimum Wines is a small Victorian producer based around certified organic farming, low-impact packaging and minimal-intervention winemaking. Founded by Matt and Lentil Purbrick, the project grew from a family vineyard in the Goulburn Valley and now focuses on wines that are bright, textural and easy to share. Minimum was founded by Matt and Lentil Purbrick, whose background in organic farming, food and regenerative living shapes the brand’s philosophy. The current winemaking team includes Matt Purbrick and Leigh Ritchie, with the project originally launched in partnership with Matt’s father, Alister Purbrick of Tahbilk.
