Minimum UN PO ‘Sotto le onde’ Sangiovese 2024: Tasting Notes
WINE STYLE → Bright & savoury Italian red
This is Sangiovese in its most drinkable lane: bright red fruit, savoury edges, and that mouth-watering, “I need pasta” finish. Think cherry and wild strawberry, a little dried oregano and tomato leaf, plus a faint earthy nuance that feels very Tuscan. It’s light-to-medium in body, clean and energetic, with gentle, sandy tannins that make it easy to sip — and even better slightly chilled.

Tasting Notes
Juicy cherry and wild strawberry lead, with a savoury twist of dried herbs and that classic Sangiovese tang that keeps your mouth watering. The palate stays dry and clean, with soft, sandy tannins and a bright line of acidity that makes it feel lifted rather than heavy. It finishes fresh, lightly earthy, and extremely dinner-friendly.
Winemaking
UN PO’ is all about truly natural, ancestral winemaking — organically grown grapes, wild fermentation, and no additives, no sulphur, and no “control”. This wine is bottled unfined and unfiltered, keeping the texture and energy intact.
Vineyard & Vintage
Grown and made at Atavica in the wild Tuscan Maremma. Sangiovese thrives here, naturally leaning into bright red fruit, savoury herbal notes and a refreshing finish — the kind of red you can happily pour on a warm evening without it feeling too much.
Why We Love It
Because it’s natural wine with real integrity behind it. UN PO’ exists to celebrate small-batch, truly natural winemaking — wild fermented organic grapes, no additives, no sulphur, and a focus on pure energy and feeling in the glass.
And it’s made by genuinely good humans. Matt’s UN PO’ project is built on long friendships and respectful collaborations (like partnering with the Atavica crew in the Maremma) — people who care about doing things properly, from the vines to the cellar. The result is a bright, honest Sangiovese that tastes like Tuscany and feels good to share.
Food Pairing
Tomato-based pasta, pizza, grilled sausages, roast veg, antipasti, and anything with herbs and olive oil — this wine lives for Italian comfort food. The acidity slices through rich sauces, and the gentle tannin grip loves anything roasted or charred.

Mood or occasion to match this wine…
Weeknight “Italy at home”: a bowl of pasta, a big salad, music on, and this lightly chilled in a tumbler when you can’t be bothered with stemware.
Cellaring
Best enjoyed young for maximum brightness and that juicy, savoury snap. If you like a slightly more mellow, earthy feel, it should drink nicely over the next 1–2 years.
Producer
UN PO’ (meaning “a little / a little bit”) has been Matt’s personal wine pseudonym in Europe since 2020. It celebrates small-batch, truly natural ancestral winemaking — wild fermented organically grown grapes, no additives, no sulphur, and no control — with pure energy and feeling. The project also became the driving force behind Minimum’s commitment (from 2024) to make all Minimum wines 100% natural wines. For vintage 2024, Matt partnered with friends at Atavica — an organic winery in the wild Tuscan Maremma — and brought his share of those completely natural wines back to Australia.

FAQ
What does this wine taste like?
Cherry and wild strawberry, dried herbs and a savoury, tomato-leaf edge, finishing dry and mouth-watering with gentle tannin grip. Light-to-medium in body and very food-friendly.
What does the name ‘Sotto le onde’ mean?
It means “Under the waves.” Very fitting: it’s a coastal-feeling Tuscan red with freshness and flow — the kind you want with salty snacks, good company, and a bit of summer in the air.
Is it sweet or dry?
Dry. The fruit is bright and juicy, but the finish is clean, savoury and structured rather than sweet.
Is this a natural wine?
Yes — it’s made in a truly natural style: organically grown grapes, wild fermentation, zero additions and zero sulphur, and bottled unfined and unfiltered.
How should I serve it?
Room temp is great, but it’s even better with a light chill (15–20 minutes in the fridge). Aim for “cool cellar” temperature so the cherry fruit pops and the acidity feels extra refreshing.
What foods does it pair best with?
Tomato-based pasta, pizza, ragù, grilled sausages, antipasti, roast veg, and herb-forward dishes. The acidity is your best friend with rich sauces.
Does it contain preservatives (sulphites)?
This wine is made with zero sulphur. Like many natural wines, it may still contain trace naturally occurring sulphites from fermentation, but there are no added sulphites.
How long will it last after opening?
Re-cork and keep it cool; it should drink well for 2–4 days. Day two often tastes even more savoury and integrated — perfect for leftover pasta.
Who will love it most?
If you like bright, savoury reds (Pinot fans often do), Italian varieties, and natural wines that feel alive and dinner-ready, this is absolutely your zone.
