‘Misto Mysto’ is pét nat the way we love it: bright, a little cheeky, and seriously easy to drink. It’s a red/white fizz (a co-ferment of multiple varieties) that lands in the sweet spot between citrusy freshness and juicy berry pop, with a soft, bready/yeasty lift and those lively, bottle-fermented bubbles. Dry, energetic and made for snacks, picnics and “just one glass” moments (lol).

On the nose: citrus peel, crunchy orchard fruit, a hint of strawberry/cherry brightness and that gentle pét nat “bread dough / leesy” lift. The palate is dry and lively, with juicy red-fruit notes sitting alongside salty-citrus freshness. Bubbles are naturally captured in bottle, so expect a softly cloudy pour and a vibrant, lip-smacking finish that loves salty snacks.
Winemaking
This is made as a traditional “mother ferment” across harvest: it starts with early-picked Sangiovese with only around 18 hours on skins, plus some direct-pressed Vermentino in stainless. As each variety is picked, it’s added into the one evolving ferment. The final addition is Malvasia, fermented on skins through primary, bringing extra body and depth. While the ferment is still active, the volume is split in two (the other part becomes ‘Un Fico’), and this portion is hand-bottled so the final stage of fermentation finishes in-bottle — capturing natural effervescence the pét nat way.
Vineyard & Vintage
Grown at Atavica in the Tuscan Maremma and by Alessandro in the Pisan Hills, then made at Atavica. Organic vines, hand-picked fruit, and a 2024 release that’s all about joyful, co-fermented energy: one wine, many varieties, one sparkling little story.
