FIELD NOTES
Wild fermented on full skins in two small open vats. One vat hyper-oxidised on day 2 of primary fermentation. Hand plunged twice-daily. Pressed to aged 300L barrels for malolactic fermentation. Barrel aged for 12 months. Hand bottled. Bottle aged for 6 months before release.
TASTES
Savoury, juicy & textural; moonlight, ripe apricots, white figs, almonds.
PERSONA
Eating fruit with you, gazing at the moon.
