Minimum Wines

About Minimum Wines

Minimum Wines is a small Victorian producer based around certified organic farming, low-impact packaging and minimal-intervention winemaking. Founded by Matt and Lentil Purbrick, the project grew from a family vineyard in the Goulburn Valley and now focuses on wines that are bright, textural and easy to share. The range suits customers who want natural-leaning wine with credible sustainability at its core.

Minimum was founded by Matt and Lentil Purbrick, whose background in organic farming, food and regenerative living shapes the brand’s philosophy. The current winemaking team includes Matt Purbrick and Leigh Ritchie, with the project originally launched in partnership with Matt’s father, Alister Purbrick of Tahbilk. That mix of family wine heritage and modern sustainability gives Minimum its distinctive voice.

These three bottles show the Minimum range at its most expressive — a bright organic red, a zero-addition Italian skin-contact white and a wild, textural pét nat.

  • Minimum Red — a relaxed Sangiovese Syrah blend with dark red cherry, forest-floor savouriness, gentle richness and a light grip. Easy, generous and made for sharing.
  • Minimum UN PO ‘Quando penso a te’ — a natural Vermentino Malvasia from Tuscany with peachy, floral texture, wild fermentation and zero additions. Pure, dry and beautifully alive.
  • Minimum Hailstorm Special Pét Nat — an energetic Chardonnay and Sangiovese pét nat with pink lady apple, ruby grapefruit, guava, brioche and citrus pith. Bright, fizzy and brilliantly unconventional.

Where Is Minimum From?

Minimum Wines comes from Victoria, with roots in the Goulburn Valley and connections to a family farming and winemaking history through Tahbilk. The region gives the wines ripe fruit and easy generosity, while the Minimum style keeps things fresh, textural and modern. The result is a range that feels relaxed, sustainable and very contemporary.

Organic, Vegan and Low-Impact Winemaking

Minimum’s approach is grounded in certified organic farming and lower-impact choices across the business. The wines are vegan friendly and made with a low-intervention mindset, using careful fruit handling and minimal additions where possible. Sustainability is not a side note here — it shapes the farming, packaging and overall direction of the brand.

What Makes Minimum Wines Different?

Minimum stands apart because it treats sustainability as the starting point, not the finish. From organic vineyards to B Corp certification and cask wine packaging, the brand is actively looking for ways to make wine with less waste and more purpose. The wines still need to be delicious, but the broader idea is wine that fits better with modern values.

What Is Minimum Known For?

Minimum is known for fresh, natural-leaning wines with texture, drinkability and a lighter footprint. The range can include red blends, rosé, pét nat and cask wine, with an emphasis on approachable styles rather than heavy or overly polished bottles. Expect bright fruit, savoury detail and a relaxed, low-fuss energy.

Why We Love Minimum Wines

We love Minimum because it brings together flavour, ethics and smart packaging in a way that feels relevant. These are wines for customers who care about what is in the glass, but also how it got there. Minimum makes organic and low-intervention wine feel practical, fun and genuinely useful for everyday drinking.

Food & Cuisine Pairing Ideas

Minimum wines are made for casual, flavour-packed food: pizza, tacos, BBQ vegetables, grain salads, roast chicken, antipasto, vegan burgers and picnic spreads. The lighter reds and rosé suit a gentle chill, while the pét nat styles are lovely with salty snacks, seafood, fried dishes and weekend grazing.

Who Will Enjoy These Wines?

Minimum is ideal for customers who want organic wine with a clear sustainability story. It suits natural wine drinkers, vegan-conscious shoppers, younger wine explorers and anyone looking for low-sulphur styles that still taste fresh and generous. If you like wine that is bright, modern and made with purpose, Minimum is a strong fit.
