Tasting Notes
Pale ivory to straw in the glass, with a gentle sparkle and a fine, soft mousse. Aromas of honeysuckle, melon, stone fruit and green apple lead into citrus brightness and an apple-fresh finish. The palate is light-bodied and softly off-dry, with a clean, crisp line that keeps the wine bright rather than sweet.
Winemaking
Gypsy is made as a Blanc de Blancs-style sparkling wine from Chardonnay. The style is clean and fruit-led, with fermentation focused on preserving green apple, citrus, melon and floral aromatics rather than building heavy lees or oak complexity. The wine is sealed under screwcap and made for freshness, fine mousse and easy celebration drinking.
Vineyard & Vintage
The fruit comes from the Bosworth family’s certified organic vineyard in McLaren Vale, South Australia. The vineyard was established in the early 1970s and converted to organic viticulture from 1995, with vines fully certified A-grade organic by Australian Certified Organic. This non-vintage release is 12.5% ABV, with approximately 14 g/L residual sugar and a bright sparkling profile built around fruit, citrus and soft bubbles.
Why We Love It

Food Pairing

Producer
Spring Seed Wine Co is part of the Bosworth family’s McLaren Vale wine story, based at 92 Gaffney Road in Willunga. The vineyard was established in the early 1970s by Peter and Anthea Bosworth and is now run by Joch Bosworth and Louise Hemsley-Smith. Joch began converting the vineyard to organic viticulture in 1995, and the vines have been certified organic since 1999. Spring Seed’s labels are inspired by vintage flower seed packets, matching the wines’ bright, approachable and organically grown character.

FAQ
What does Spring Seed Gypsy Blanc de Blancs NV taste like?
It tastes fresh, lightly floral and softly sparkling, with honeysuckle, melon, stone fruit, green apple and citrus. The palate is light-bodied, gently off-dry and crisp, with a fine mousse and an apple-fresh finish. It is more fruit-driven than yeasty or toasty.
Is this sparkling wine dry or sweet?
It sits in a soft off-dry sparkling style, with approximately 14 g/L residual sugar. The sweetness is balanced by citrus and green apple freshness, so the wine finishes clean rather than sugary. It is not as dry as Brut Nature or very dry traditional-method sparkling.
What is the body, acidity and bubble style like?
The body is light, the acidity is fresh and the bubbles are soft rather than aggressive. The mousse is gentle, making it easy to drink as an aperitif. The citrus and apple finish keep the wine refreshing.
Does this wine contain preservatives or sulphites?
This is a certified organic sparkling wine, not a No Added Preservative wine. It may contain sulphites, as most wines do, and organic wines are made to lower allowable sulphur limits than conventional wines. It is made from certified organic fruit.
How should I serve Spring Seed Gypsy Blanc de Blancs?
Serve well chilled at around 6–8°C. A flute will keep the bubbles lively, while a white wine glass will show more honeysuckle, melon and apple aroma. No decanting is needed.
What food pairs well with this sparkling wine?
It pairs beautifully with oysters, prawns, soft cheeses, zucchini fritters, seafood salads and salty aperitif snacks. The bubbles refresh fried or creamy foods, while the apple and citrus notes suit seafood and fresh herbs. For a vegetarian match, try ricotta and zucchini fritters or a goat’s cheese salad.
Can this Blanc de Blancs be cellared?
This sparkling wine is best enjoyed young while the fruit, citrus and bubbles are bright. Drink now to 2027 for the freshest honeysuckle, melon and apple notes. It is not intended as a long-cellar sparkling style.
Is Spring Seed Gypsy Blanc de Blancs vegan friendly?
Vegan status is not specified for this wine. It is certified organic and made from the Bosworth family’s McLaren Vale vineyard. Choose a wine clearly marked vegan suitable if vegan certification is essential.
Who will enjoy this wine the most?
This is ideal for drinkers who enjoy fresh sparkling wine with soft bubbles, orchard fruit and gentle floral detail. If you like Blanc de Blancs, lighter organic bubbles or easy aperitif-style sparkling wine, this will suit you well. It is fruitier and softer than very dry Champagne-style sparkling.
Is this wine keto friendly?
This wine has approximately 14 g/L residual sugar, so it is not the driest sparkling option. It may suit moderate low-sugar drinkers, but strict keto customers may prefer a drier Brut or Brut Nature style. Alcohol still contributes calories, so enjoy it mindfully as part of your broader plan.
