Spring Seed Wines are made from grapes lovingly grown in our family’s organic vineyard, located in the premium wine region of McLaren Vale, South Australia. The vineyard was established in the early 1970’s by Peter and Anthea Bosworth, and is now owned and run by their son Joch, who began the conversion to organic viticulture in 1995. The vines are fully certified ‘A’ grade organic by Australian Certified Organic, a process that takes four years and involves yearly audits and random sampling of produce.

The Spring Seed Wine labels are unashamedly inspired by vintage flower seed packets created at the turn of the last century. The colour, clarity and beauty of the original seed packets are quite remarkable. We have chosen the Gypsophila image for our Blanc de Blancs. 'Gypsy' is our pet name for this delicate white flower.

Winemaking

Gypsy is made using our home grown organic Chardonnay, which is picked early to get some lovely fresh green apple characters and pressed off skins for cool fermentation in stainless steel. Like a well-bred English girl of yesteryear, Gypsy is sent off to finishing school in the Barossa (not Switzerland in this case) to find her fizz, before coming home to be presented to polite society for all to see and admire in her gorgeous packaging.

Tasting Note

‘Gypsy’ is a classic Blanc de Blancs style, with a pale straw colour (with a hint of green apple), fine mousse and gentle characters of citrus. A splendid wine for celebration, Gypsy is also a versatile wine, try with oysters or anything else that takes your fancy. Serve chilled.
