Deep ruby in the glass. The nose leads with blueberry, blackberry and plum, then moves into liquorice, clove and cracked black pepper. The palate is dry and medium-to-full bodied, with dark berry fruit, savoury spice, firm tannins and a smoky, meaty thread through the finish. It is bold enough for barbecue and roast dinners, but the moderate alcohol keeps it fresh and well-shaped.

Winemaking

This Shiraz is made without added sulphur dioxide, with Free SO2 0 ppm and Total SO2 0 ppm. The wine undergoes fermentation to build colour, flavour and tannin, followed by malolactic fermentation for a rounder flow. Oak is used as seasoning, bringing spice and structure while keeping the fruit, pepper and savoury detail at the centre.
