A moderately wet spring and early growing season meant conditions were excellent for !owering and fruit. The 2021 vintage and the later growing season was very cool and dry, which led to slower ripening over the season and low disease pressure. A slow and mild ripening period meant natural acidity, concentrated fruit !avour and "ne tannins.
Malbec harvested at 13 Baume on the 26th Feb, Shiraz was harvested on the 22nd Feb at 13.2 Baume, in the cool of the morning. Both parcels were destemmed, inoculated and fermentation commenced a few days after a cold soak. Both varieties had a long and cool fermentations over two and a half week at temperatures between 18-20ºC to retain fresh aromatics. After fermentation was complete, malolactic fermentation was encouraged and was completed 1 week later. The wine was blended soon after and left with 20% new French oak equivalent, before being bottled in May 2021. No Sulphur dioxide was added while making this wine.
