Tasting Notes for Organic Hill Founders Preservative Free Shiraz 2020 from the Winery

Driven by our natural Organic passion and ‘raison d’être’, this super-premium ‘certified Organic‘ wine is also made preservative free and vegan. A deep red colour with a soft ruby hue. Aromas of dense, intense spice and black pepper, with hints of blackberries herald the rich, deep black fruits and berry flavours that fill the palate. Balanced and supple fine-grained tannins complement the fine acid structure lending a persistence and beguiling complexity.

Vintage and Style Notes

The Shiraz grapes were harvested from a premium biodynamic and organically grown vineyard, in the premium McLaren Vale region. Upon arrival at the winery the grapes were partially crushed into a static red fermenter and inoculated with a Rhone yeast strain, which enhances the varietal characters and helps to encourage immediate fermentation.

The juice was then pumped over the skins for seven days before the grapes were dropped with the aid of gravity into the press and the wine was pressed off the skins into pristine stainless steel. The wine then underwent malolactic fermentation in tank and was bottled early without the use of finings or Sulphur Dioxide additions, to retain its freshness, vibrancy and ‘preservative free’ provenance.
