Winemaking
Morning Bride is made from Shiraz grapes picked early from Spring Seed’s Chanticleer block at around 10–11 degrees Baumé. The fruit is hurried to the winery, destemmed and pressed quickly with no skin contact, so the wine keeps its pale pink colour rather than becoming deeply coloured. It is fermented like a white wine in chilled stainless steel, with no oak and no malolactic fermentation, preserving crisp acidity and fresh red-fruit detail.
Vineyard & Vintage
The fruit comes from the Chanticleer block in the Bosworth family’s certified organic McLaren Vale vineyard, grown on free-draining stony loams. The 2025 Morning Bride was picked on 10 February 2025 and bottled on 15 May 2025. It is 12.5% ABV, dry, with approximately 2 g/L residual sugar and less than 1 gram of sugar per 100mL.

Joch began converting the vineyard to organic viticulture in 1995, and the vines are fully certified A-grade organic by Australian Certified Organic.
