Tasting Notes

Rich and perfumed with poached pear, ripe yellow pear, quince, red apple, grilled apricot, ginger, warm spice, honeysuckle and white flowers. The palate is dry, lush and mouth-filling, with satin texture, creamy lees detail and vibrant acidity giving shape and lift. Subtle marzipan, dried pear and mineral freshness carry through a long, savoury finish.

Winemaking

The fruit was picked in the early morning to preserve freshness, then loaded into the press without crushing and gently pressed. After natural settling, the juice was racked with light lees to stainless steel and neutral French oak puncheons for wild fermentation. The wine remained in puncheons on lees for four months, completing natural malolactic fermentation before blending, filtering and bottling.
