Tasting Notes

In the glass, See Saw Chardonnay shows pale straw with a subtle green edge. Aromas lean toward white peach, lemon curd and grapefruit pith, layered with gentle cashew, nougat and a whisper of struck flint from quality French oak. The palate is medium-bodied yet refined, with tight, cool-climate acidity carrying stone fruit, citrus and savoury oak in a long, mineral line. It’s creamy and textural from lees work and partial malolactic fermentation, but still feels bright, pure and refreshingly modern.

Winemaking

Fruit is harvested from See Saw’s two premium Chardonnay vineyards in Orange — Coole Park and Balmoral — both farmed organically. Grapes are whole-berry pressed and transferred with light solids to 1–4 year old French oak puncheons for fermentation, building subtle oak complexity without overpowering the fruit. Around 50% of the wine undergoes malolactic fermentation to add creaminess while retaining bright, lively acidity. The wine is matured for approximately six months in oak with regular lees stirring to enhance texture and flavour, then blended, lightly filtered and bottled to preserve freshness.

Orange, NSW is one of Australia’s leading cool-climate regions, with elevation and diurnal shifts that are ideal for Chardonnay. The Coole Park and Balmoral vineyards sit at altitude, delivering fruit with natural acidity, fine flavour detail and a distinct mineral edge. Organic viticulture and careful canopy management help the grapes ripen evenly while maintaining freshness, resulting in a Chardonnay that feels both concentrated and finely etched.
