Winemaking
Made from organically farmed Tempranillo, this rosé is designed to preserve freshness, perfume and varietal clarity. The grapes are picked at night and in the early morning, then transferred quickly to the winery for destalking, light crushing and stainless-steel fermentation. A short period on skins gives the wine its pale strawberry colour, while fermentation is stopped by chilling when the balance of fruit, acidity and gentle residual sweetness is right. There is no oak influence.

The fruit comes from organically farmed vineyards in Uclés, central Castile, where warm sunny days build bright fruit flavour and cool nights help retain natural acidity. The vineyards are managed as an integrated ecosystem and are surrounded by the traditional Mesta landscape, where historic sheep migration routes still pass through the region.
