Tasting Notes

Winemaking

Hand-picked fruit is pressed and fermented in a mix of ceramic egg and stainless steel. The wine is then matured in ceramic egg and older French oak barriques, resting on lees for four months before blending and bottling. The approach keeps the aromatics bright while building texture and shape rather than overt oak flavour.
