Tasting Notes for See Saw Organic Shiraz 2019 from the Winery

There are those that argue Orange is where Shiraz ultimately finds its own balance in Australia. Our cool climate Shiraz has hints of white pepper and spicy fruit flavours which pair perfectly with lamb and other slow cooked meat dishes.

Colour: Dark ruby red with bright magenta hue.

Aroma: A lifted and fragrant aroma of dark berry fruits, violets, crushed herbs and briars.

Palate: Medium bodied with savoury notes and a long finish. Well balanced, grippy tannins that will soften over time.

Food matches: Balance with a range of game meat dishes, charcuterie or rich flavoured cheeses.

Winemaking: Harvested late March 2018. Partially fermented on skins for 10 days. Twice daily pump overs to extract a richer colour depth and tannins. Combination of 2 and 3 year old French and American barriques and stainless steel to undergo 100% malolactic fermentation and 12 months maturation prior to bottling in April 2019.
