Winemaking
The ripening period for Sangiovese in the Cowra Region was optimal during the 2021 vintage. The distinct flavours from cherry to raspberry were evident in the vineyard. The fruit for this wine was harvested at 9.5 Be to obtain refreshing red fruit characters, whilst still having a lower alcohol. Yeast was selected for its aroma production and ferment was held at a cool temperature for a period of three weeks. The final fermentation occurred in a pressurized tank, and this gives the wine it’s lovely light spritz.
Growing Season
These parcels of Sangiovese were selected from the crest block vineyard. These wines are all over 20 years old. 2021 was a particular good vintage with late spring and early summer rainfall and a warm end summer providing a sound end to the the growing season. Cowra is recognised as a premium wine region, and this season proved why. The crest block vineyard has been certified by Australian Certified Organic for over 3 years.
