Vibrant strawberry and subtle cherry with faint violet aromas and herb-like qualities, medium-bodied with attractive cherry and plum flavours, balanced by light tannins.
Pinot Noir is the ultimate test of patience and timing. It requires an exact balance of slowly ripened fruit flavour and natural acidity, framed with silky oak tannins.
Tasting Notes for See Saw Organic Pinot Noir 2023 from the Winery
Bright cherry red in colour with aroma of red plums, violets, with a hint of background oak. The palate has wild strawberries, pomegranate, and a spicy red fruited mid-palate integrated with fine tannins.
Winemaking
A unique blend of five Pinot clones (MV6, 667, 115, 777, and Abel) grown across our three vineyards of varying elevations. These parcels were selectively harvested in the cool morning. Fruit was cold soaked prior to fermentation in open top fermenters. Hand plunged daily, for light extraction, the wine was pressed off skins after 10 days. Matured in a combination of stainless steel tanks and barrels for 6 months, prior to blending and bottling. The result is a red fruited, delicate Pinot Noir to be enjoyed at any occasion.
