Winemaking

The Cabernet Sauvignon was fermented in open fermenters, with the cap hand plunged daily for six days to build colour, fruit expression and gentle structure. It was matured in a combination of three-year-old French oak and four-year-old American oak barrels, then racked every six months before completing 12 months of maturation in stainless steel. Oak is used to support the fruit, not dominate it, keeping the wine energetic and fruit-led.
