The palate builds in layers, with creamy lime curd and ripe stone fruit wrapped around a bright line of citrus acidity. Barrel fermentation and lees ageing bring softness and texture, while the seasoned oak stays comfortably in the background. The finish is fresh, savoury and lingering rather than overtly buttery or heavily oaked.
Winemaking
The Chardonnay was picked in the cool of night, then gently whole-berry pressed before fermentation in seasoned French oak puncheons. The wine remained on lees for five months, building creamy texture, savoury complexity and breadth while retaining the freshness of the fruit. Using seasoned rather than strongly flavoured new oak allows the peach, nectarine and citrus characters to remain at the centre of the wine.
Vineyard & Vintage
This is a single-vineyard Chardonnay from Paxton’s Thomas Block at McLaren Flat, one of the coolest sites in the Paxton estate. The vineyard sits on low, flat ground at around 74–85 metres elevation, with alluvial clay and river-stone soils and Chardonnay among its established plantings. Thomas Block was David Paxton’s first vineyard purchase in 1978 and remains one of the estate’s most important sites. The slow, steady 2026 McLaren Vale vintage produced Chardonnay with natural balance, flavour and fresh acidity.

Paxton Wines is a family-owned McLaren Vale producer established by respected viticulturist David Paxton in 1979. All fruit comes from the family’s estate vineyards, which have been fully certified organic and biodynamic since 2011 and are farmed without synthetic fertilisers or pesticides, with soil health and biodiversity central to the approach. Thomas Block was the first vineyard David Paxton purchased, in 1978, and remains one of the jewels of the estate. Its cooler position, alluvial clay and river-stone soils and long viticultural history make it particularly important within the Paxton range. The vineyard was also named a Young Gun of Wine Top 50 Vineyard finalist in 2023.
