A medium bodied shiraz with aromas of aniseed, white pepper hints of cedar. On the palate the flavours are quite savoury & dense; liquorice, sarsparilla and easy fine-grained tannins with a lingering finish. It is not fruit drive, but has a gentle savouriness & softness that makes it very easy to drink.
This wine is the pure natural product of 100% biodynamic grapes. Nothing has been added to it, and only the minimum (skins, seeds and dead yeast cells) removed.
The certified biodynamic grapes for this wine were grown at the Goulburn Terrace vineyard, on the banks of the Goulburn River near Nagambie, in Central Victoria. They were hand harvested over several days in late March, crushed into several small batches, and allowed to spontaneously ferment. The cap was managed by hand plunging, and the batches were all dry within about 3 weeks. After a further week on skins, they were basket pressed and combined. The wine was left to mature in tank (no oak!) for the next 3 years. Malo-lactic fermentation occurred spontaneously during the first few months. In early 2015 it was carefully racked, then bottled without fining, filtration or sulphur addition. Nothing has been added to this wine, and nothing removed from it. The wine is the pure natural product of 100% biodynamic grapes.
With no fining agents used, it is suitable for vegans.
