This sparkling is an elegant Blanc de Noir made from Cabernet Sauvignon in a Brut style. Blanc de noir denotes a white sparkling made from black or red grapes, and in traditional Champagne, the red grapes are Pinot Noir or Pinot Meunière. So, Cabernet Sauvignon is an unusual variety to make a sparkling from, but wow does it work really well.
It's a must-try with a distinctive pale pink (partridge eye) colour, and aromas and flavours of citrus peel and red fruits with distinctive yeast/nutty notes.
