Tasting Notes

Plenarius is aromatically rich and deliberately challenging in a good way. Dried apricot, marmalade, jasmine perfume, candied ginger and hints of lemongrass rise from the glass first. The palate then shifts direction, beginning dry and textural rather than sweet. Ripe white fruits sit alongside natural tannin, a slight oily roundness and a grainy mineral line that gives the wine shape and persistence. It is a multi-dimensional skin-contact white with clear phenolic grip and a finish that lingers well beyond the fruit notes.

Winemaking

Kalleske describes Plenarius very clearly: 100% Viognier, wild fermented completely on skins, matured in hogsheads, then bottled unfined and unfiltered. No sulphites were added. This is an intentional whole-grape approach designed to use skins, tannin and texture as part of the wine’s structure, rather than treating Viognier as a simple aromatic white. The naturally amber colour is a direct result of that extended skin contact.
