Tasting Notes for Dormilona Tinto 2023 from the Winery
Tinto is made in the young nuevo style grown from organic Shiraz from Osmington. Simply harvested in the cool morning light, wild fermented in open bins then basket pressed off to tank before sugar completion. Natural malo, racked, blended & bottled. No additions, finings nor filtration to bottle. Only minimal sulphur.
Dormilona - Spanish for 'lazy bones'
- Medium-bodied at most, full of vibrant fruit with a hint of spice and holds structure.-
