Winemaking

Tinto is made in a young nuevo style from organic Shiraz grown in Osmington, Margaret River. The fruit is picked in the cool morning, wild-fermented in open bins and basket pressed to tank before sugar completion. Natural malolactic fermentation follows before the wine is racked, blended and bottled. It is made with no additions, no fining and no filtration, with only minimal sulphur.

Dormilona is the Margaret River label of Josephine “Jo” Perry, an award-winning winemaker who founded the brand in 2012 after years of experience across Australia, France, Spain and California. The name Dormilona means “lazy bones” in Spanish, a nickname Jo picked up while working in Spain, but the winemaking is anything but careless. Her approach is deliberately slow, hands-off and nurturing, using organic fruit from family-owned vineyards, wild fermentation and minimal intervention to let the fruit, site and vintage show clearly in the glass.
