The name Dormilona means “lazy bones” in Spanish, a nickname Jo picked up while working in Spain, but the winemaking is anything but careless. Her approach is deliberately slow, hands-off and nurturing, using organic fruit from family-owned vineyards, wild fermentation and minimal intervention to let the fruit, site and vintage show clearly in the glass.
