WINE STYLE → Textural & mouth-filling
The final Fiano release in Delinquente’s experimental Hell Series is all about texture without sacrificing freshness. Ripe white peach and honeysuckle lead into delicate florals, salty lees and a gently savoury edge. Half the fruit was sent straight to barrel and half kept bright in stainless steel before ageing in Slavonian oak foudre and neutral French barriques. The result is generous and mouth-filling, but a cracking line of acidity pulls everything into focus and keeps the finish long, fresh and distinctly moreish.

Ripe white peach and soft stonefruit lead, lifted by honeysuckle and delicate white florals. Underneath is a savoury, salty lees character and subtle oak-derived texture rather than obvious woody flavour. The palate is generous and rolling, with genuine mouth-filling weight, but Fiano’s naturally bright acidity cuts straight through the middle and draws everything into a long, tight, refreshing finish.
Winemaking
The fruit was split on arrival, with half pressed directly to barrel for fermentation and the other half fermented in stainless steel to preserve brightness and freshness. The parcels were then aged in a combination of large Slavonian oak foudre and neutral French barriques before being blended back together. This combination gives the wine its contrast of juicy fresh fruit, leesy savouriness and softly rounded texture without strong new-oak flavour.
Vineyard & Vintage
Delinquente works with Southern Italian varieties grown in South Australia’s warm, dry Riverland, where grapes such as Fiano are particularly well suited to the climate. These varieties are naturally drought tolerant, late ripening and capable of retaining good acidity through hot growing seasons. Delinquente works with organically grown fruit and chooses these Mediterranean varieties both for flavour and for their ability to thrive with less water in the Riverland environment.
Why We Love It
There is plenty going on here, but nothing feels overworked. Barrel, foudre and lees bring a lovely savoury softness through the middle, then that bright line of acidity comes through and cleans everything up. It has enough texture to satisfy someone who normally reaches for a fuller white, yet enough salt and freshness to make another glass very easy. And as the last Hell Series Fiano, this release marks the end of a particularly interesting Delinquente experiment.

Producer
Delinquente Wine Co was founded by Riverland local Con-Greg Grigoriou and makes small-batch, minimal-intervention wines from Southern Italian grape varieties grown in South Australia’s Riverland. The focus on varieties such as Fiano, Vermentino and Nero d’Avola is practical as well as stylistic: they handle heat and dry conditions well, require less water and retain useful natural acidity. Delinquente works with organically grown fruit and lets the vineyard and variety do most of the talking in the winery. Even the distinctive hand-drawn labels have a Riverland connection, created by Greg’s friend and artist Jason “Ankles” Koen.
