Babich developed the first vineyard to achieve sustainable registration in New Zealand. With our ongoing commitment to protect the environment through only implementing sustainable practices in all our vineyards, it was a logical progression to move to the next step and investigate the benefits of an organic approach to viticulture. Our Headwaters Vineyard is farmed in compliance with organic standards.
Our Headwaters organic block is fully certified and is farmed in compliance with organic standards. First made in 2009, this crisp dry Sauvignon Blanc is produced from grapes grown on the organic block in Marlborough and vinified in compliance with organic standards.

Fruit from our certified organic block Headwaters Vineyard were harvested in April. The grapes were quickly crushed and pressed into stainless steel tanks where the juice was fermented at controlled temperatures with combination selected and indigenous yeast to capture the intense varietal flavours. Strict organic procedures were followed at all times.
Residual Sugar: 1.6g/l
Pretty nose combines floral notes with lime, lemon and orange. Citrus notes persist on the palate with a good dollop of slate/mineral. Juicy green fruits and spice linger on the crisp finish.

"Bright, very pale straw colour with green hues, pale on rim. The nose is restrained with softly fresh aromas of gooseberries and sweet peas, along with fresh herbs, lantana and tropical fruit notes, unveiling a fine, tight core with penetrating nuances of chalky minerals. Dry to taste and elegant in presentation, the palate features a tight core with restrained and subtle fruit flavours of gooseberries, sweet peas, fresh herbs and white stone-fruits, entwined with mineral notes.
