The berries picked to create this wine were sourced from Temple Bruer’s certi?ed organic vineyard.
After crushing, the varieties were fermented for 9 days within the temperature range of 20 - 22° C. The ferment was then gently pressed, all the pressings were included with the free-run wine. Malolactic fermentation followed. On completion of MLF the wine was racked into old French and American oak for about 18 months before bottling on the 10th July 2014.
COLOUR Deep red.
AROMA The nose is abundant with ? oral notes of rose and violets which are complemented by richer ?avours of chocolate and malt with hints of spicy anise.
FLAVOUR The palate is rich with fruit and complemented by ?ne integrated tannins.
