Tasting notes from the winery for See Saw MARGE Organic Skin Contact Pinot Noir 2019

Affectionately know as MARGE, this 2019 skin contact organic pint noir  has been incubated as naturally as possible. The hand picked fruit was gently carbonically mascerated for 15 days on skins before being lovingly pressed off. This sultry seductress is the second adventurer in our See Saw Incubator series. Colour: Cloudy ruby.

Aroma: Dark cherry, glacé strawberry, salty plum. 

Palate: Velvet mouth feel.

Food matches: Venison, game, curry, charcuterie and cheese boards with friends. 

Winemaking: Selected from our organically certified pinot noir blocks from Springvale at 830m, these grapes were hand picked on the 16th March 2019 from 6.30am. Placed into 10kg baskets, taken directly to the winery and refrigerated overnight, these whole bunches were then moved into stainless steel tanks. Wild fermentation started while the grapes were fully intact. After 15 days the carbonic maceration was finished and the fruit was gently pressed into 4 year old French oak for 4 months to increase the mouth feel. The wine was passed through a rock filter prior to bottling.
