Tasting Notes for Rosnay Garage Wine No. 18 Bon Bon Vermentino 2022 from the Winery
Organically grown vermentino, whole bunch pressed, cold settled, hyperoxidised, and inoculated with wild yeast.
Towards the end of the fermentation the wine was chilled and racked, and blended with a touch of skin contact chardonnay.
The final wine has a delicious punchy sweetness and a zingy and savoury acidity to match.
You might want to keep it cool in case it goes “pet nat” in the bottle!
