Grown, vinified and bottled at “Rosnay”
Our aim with this unique wine was twofold… Firstly, to produce an “entry level” Amber wine using brief skin contact. That is, the vermentino grapes were hand picked, chilled and crushed, then left for 3 days prior to fermentation “on skins”, with the juice extracting the characteristic phenols in the white grape skins, similar to the tannins in red grape skins. The addition of 20% grenache, treated the same way, was aimed at giving the wine an extra blush of colour, to make a wine with the characteristic organic-apricot colour of an Amber wine but with less phenolic intensity. The result: a lighter, easier drinking Amber wine for those of us who are new to the style.
Secondly, to produce a delicious and stable wine without using preservatives. That is, to make the wine with zero sulfite additions, but in a way that minimises the risk of oxidation in the bottle. To do this we “hyperoxidised” the grape juice before fermentation, a technique widely used in France but rarely in Australia. The juice (or “must”) goes brown but after fermentation it regains its clarity and bright colour as the oxidised components settle to the bottom of the tank. The result is wine that does not oxidise in the bottle, and therefore can be bottled without filtration or preservatives.
