Cassis, perfumed spices of pepper and clove. Elegant vanilla oak overlays silky fruit with plums, currents and delicate chalky tannin.
Following the wettest winter in four decades the Cabernet vines had a wonderful 2017 vintage, producing a rich crop ripening later than ever in perfect, cool conditions (harvested on 1 May 2017). Open fermented with some whole bunch foot treading and maturation in barrels. Filtered, not fined. Vegan friendly.
Tasting notes from the winery for Rosnay Cabernet Sauvignon 2017
Rosnay’s most awarded wine, twice winning the Greg Johnson Trophy for best Cowra red in the Cowra Wine Show. Grown on the lower slopes with cool night time temperatures for gentle, slow ripening of the fruit. Open fermented and foot trodden for gentle tannin extraction and balance. Medium bodied with lots of dark berry and mint character typical of the variety.
Cabernet Sauvignon is ideally suited to the Cowra region where the late autumn temperatures are lower, especially at night, allowing for gentle ripening and flavour development of this late ripening Bordeaux red variety.
A total of 4 hectares of Cabernet Sauvignon is planted at Rosnay, on heavy clays on the lower slopes, to enhance the effect of the cool autumn night temperatures. Organic and biodynamic methods are low input, and during drought the Cabernet yield was very low.
The making of the Rosnay Cabernet Sauvignon seeks elegance and finesse, rather than overpowering flavour and oak. It is lightly filtered and not fined with animal proteins, thus preserving complexity and flavour, and ageing ability.
