This shiraz shows a pleasant minty edge to the black plum fruit. The palate is round with good oak integration.
The Story
The Vintage: 6 tonnes per hectare, harvested on 11 March and 21 March 2005. Picked later than ever before, the fruit was allowed to develop full flavours, with some concentration by shrivelling, and very little green tannin in the must.
The Winemaking: The grapes were crushed with very little sulfur added, and the wine matured unoaked on gross lees with stirring, to give broad mouth feel in a light, Unoaked style with gentle, slightly rustic tannins. Alcohol: 13.3%; TA 5.9g/l; pH: 3.67; Residual sugar: 0.3g/l; SO2(ppm): 21free/51 total.
