Pale straw to near-transparent in the glass, this Sauvignon Blanc opens with passionfruit, gooseberry and citrus, then adds green pea, lime zest, fresh-cut grass, nettles and a flicker of tropical fruit. Winemaking
The Sauvignon Blanc was harvested in two separate components. The first parcel was picked at 11.8 beaumé and cold soaked for eight hours before pressing, giving a more austere, high-acid component with capsicum and Lantana-like characters. The second parcel was harvested eight days later at 12.6 beaumé, bringing riper passionfruit and gooseberry characters with softer acidity. Free-run juice was fermented in stainless steel at 14°C with aromatic yeasts, then blending trials were used to create a classic Sauvignon Blanc profile.
Vineyard & Vintage
The fruit comes from two organically grown Sauvignon Blanc vineyard blocks in Cowra, New South Wales, with vines around 15 years old. The 2024 vintage marked the first organically certified year for this Sauvignon Blanc after three years in conversion. Canopy management was used to increase shading and help protect varietal gooseberry character, while crop load was managed for ripeness through an optimal growing season. The wine is 12.0% ABV, dry, with approximately 4 g/L residual sugar and less than 1 gram of sugar per 100mL.
