PALATE: Quite rich on the palate, lovely soft texture with apple & pear characters. A little grip on the finish which is long-lasting.
CELLARING: Some amazing secondary characters will be the reward for short term cellaring of 2-3 years

David Paxton believes that the people who apply the art and science of viticulture are just as important as the winemaker in the making of good wines. That’s why for three decades the Paxtons have nurtured their prized vineyards, some of which were first planted in the 1890s. Our aim is to showcase the intensity of fruit grown biodynamically.
VINIFICATION: Sourced from our ‘Thomas Block’, this wine displays fruit freshness and structure, highlighting the suitability of this site for the production of premium white varieties. Handpicked, whole bunch pressed. Free run juice and pressings combined that undergo 100% wild ferment in stainless steel.
Lees are stirred for upwards of six weeks under oxidative conditions. This increases the texture, structure and complexity. Grapes are picked riper to get an increased fruit character, fuller body and mouth-feel. No Sulphur added. Cased produced: 100
