This Syrah opens with dark cherry, black fruits and black pepper, then moves into bay leaf, dry herbs, florals and a subtle animal-skin savouriness. There’s a lovely mineral note too — more wet stone and clay than overt fruit sweetness — which gives the wine a distinctive, grounded personality. The palate is dense but graceful, with satiny tannins and a long, savoury finish that feels more structural and mineral than oaky.
Winemaking
This is a very hands-on, small-scale wine. The fruit was hand picked on a fruit day, partially destemmed and partially left as whole bunches, then placed into an amphora from Impruneta in Tuscany for natural fermentation with no added yeast or other products. It spent 41 days on skins with delicate hand plunging, was gently basket pressed, and then returned to amphora for a further six months before bottling with minimal sulphites.
Vineyard & Vintage
The fruit comes from Paxton’s Thomas Block in McLaren Vale, with vines planted back in 1887. These ancient vines are carefully hand pruned and thinned for low, even yields and exceptional fruit concentration. The 2022 season in McLaren Vale was relatively cool and slow-ripening, with good winter rain, no major extreme events, and a long, fine March that allowed Paxton to harvest with strong natural acidity intact.
