This sparkling is an elegant blanc de noir made from Cabernet Sauvignon in a brut style......yes that's right, I said Cabernet Sauvignon. Blanc de noir denotes a white sparkling made from black or red grape, and in tradition Champagne, the red grapes are Pinot Noir or Pinot Meunière. So Cab Sauv is an unusual variety to make a sparkling from, but wow does it work well. With a distinctive pale pink (partridge eye) colour, and aromas and flavours of citrus peel and red fruits with distinctive yeast/nutty notes, it's a must-try.
