A gorgeous pale straw colour. The nose yields aromas of spiced baked pear, citrus and honeysuckle as an entree to a palate brimming with juicy pear, white nectarine and apple flavour braced with zesty lime and lemon. Some fruit sweetness is beautifully balanced with acidity reminiscent of Meyer lemon. This is a fresh and vibrant Pinot Grigio that has great texture, varietal character and balance.

The premium organic Pinot Gris grapes were harvested from the selected high-quality vineyards in the Limes tone Coast area. They were picked early to give a fruit profile typically characteristic of the Pinot Grigio style. Upon arrival at the winery the gr apes were first rapid chilled, before crushing and pressing into an insulated tank. The juice was settled for 3 days at 2 Degrees C, and then racked clear of any settled sediment. An aromatic yeast strain was introduced to accentuate the varietal characters, and the juice was then fermented between 12 – 15 Degrees C. Post Fermentation, minimal SO2 was added, the wine was settled on the lees to develop further complexity and texture, before final filtering and bottling.
