Tasting notes from the winery for No Evil Organic Sauvignon Blanc 2021

Pale in colour with slight green edges. Fresh and vibrant nose with restrained floral and trademark passionfruit aromas aiding complexity as well as wet-stone and white apple notes. The palate displays impressive lime, citrus and passionfruit flavours underpinned by a fine mineral acid backbone. Nicely restrained, this Sauvignon Blanc would pair brilliantly with a Goat’s cheese pizza. 

2021 Vintage: If 2020 was all about the heat, then 2021 will be remembered as the wet season. In many parts of Australia, it was unseasonably wet in winter but not at critical times to do damage nor impact the resultant ripeness of the grapes. A cool and dry summer meant even ripening was achieved between dry and rainy spells and the ensuing fruit quality was excellent and for once yields were up making for a bumper harvest in 2021.

Summary: The See, Hear, Speak No Evil Organic wines are sourced from fully certified Organic vineyards and made using minimal additions. The wines are Organic, Vegan friendly and made to EU guidelines for minimal preservatives (less than 30ppm Free Sulphur). A new benchmark in affordable Organic Wines.

Winemaking: Sourced from a vineyard at 350m in altitude. Hand picked into small bins and chilled before transportation to the winery, A very fast and precise vinification with a cool fermentation in stainless steel before extended maturation on lees to build texture and complexity. A small amount of Viognier was added for aromatic complexity.
