Martins Hill 2006 Dolce Vita



The Story

We chose the unusual step of using Cabernet Sauvignon to make this medium dry blush/white wine. This was achieved by removing the free run juice instantly from the skins at the crusher. Fermentation from then on was as for white wines, in an inert atmosphere at controlled cool temperature.

The wine has a wonderful mouth-feel with the background flavours of its source Cabernet Sauvignon.
