Nose: Black cherry, liquorice, roasted coffee.
Mouth: Rich in body and well structured. A mid palate characterised by the warm herbs and spices of the Roussillon.

The Story

The parcels are situated on the Vallée de l'Agly. Gneiss and schiste of Dévonien. Manual harvest, 100% destemmed. Extraction is conducted entirely by punching the cap. The maceration lasts between 2 to 4 weeks, monitored by daily tastings. Aged in tank.
