Hochkirch vineyard lies on a north facing slope 250 m. above sea level along an elevated plateau running southwest from Dunkeld at the foot of the Grampians in far south west Victoria. The vines are dry farmed (no irrigation) and no synthetic fungicides, pesticides or fertilisers are used; certified bio-dynamic by Demeter.   

Tasting Notes for Hochkirch Biodynamic Blanc 2017 from the winery:

In our first average rainfall year since 2014 our Semillon thrived and produced a super crop. Harvest gave an average baumé of 10.5 which I admit was a little less than planned and did produce a little trepidation. We destemmed and macerated the berries for 5 days, pressing after ferment was established. Ferment in tank was followed by winter in large wood and then 100% malo prior to assemblage and bottling. This year for the first time we bottled 500L with no added sulphur. At this stage I can’t distinguish between the 2 and so of course the unsulphured is our go-to aperitif. 

Long slow fermentation, natural yeasts, no filtration, minimal intervention and additives. Vineyard is high-density planted and dry farmed.  1.5 Hectares of Riesling. Certified Biodynamic by Demeter.
