This is a medium weight wine with a generous palate that displays lovely texture, a lively structure without being overbearing. An element of creaminess shows through on the back palate with soft acids.
Aged in new French oak for 3 months.
Origin
All Gemstone Wines are made from 100% organic fruit that we have sourced from around the best wine-growing neighbourhoods of South Australia. The chosen parcels express fresh varietal flavours and the exciting possibilities of new and traditional blends. In short, we strive to make wines that put enjoyment ahead of understanding.
Winemaking
Picked at night to capture the full flavour the grapes were gently crushed, de-stemmed and lightly pressed to preserve the delicate flavour compounds. Natural fermentation commenced first in oak and then the stainless component was cross inoculated. Cool ferment temperatures (12-15 degrees) have retained the fruitiness of the wine and with lees stirring in both oak and tank the wine has a lovely creamy texture. Aged in new French oak for 3 months the fruit spectrum of the wine is retained with a hint of savoury flavours evident.
