Tasting Notes for Eye Chart Preservative Free Organic Shiraz from the Winery

The colour displays a distinctive purple hue only evident in PF wines. The nose has a big hit of ripe juicy blue fruits which are complimented with pepper, clove and vanilla spice.

The aroma is pure and inviting with no sulphur added. Flavours in the mouth are very inviting, highlighted by blueberry muffin characters (this wine may be suitable for breakfast). The bright fruit characters give a perception of sweetness from the intense fruit flavour although the wine is dry.

Winemaking:
We have now been making PF wines for 5 vintages. We have learnt a lot along the way. The key to making PF wine is to start with great fruit and 2018 was exceptional. Aggressive tannin is often a barrier to early release reds however this threat is reduced
significantly by ensuring the fruit is ripe in the vineyard. The fruit was harvested on the 18th of March when we could tastefully develop fruit characters of blueberry and blackberry.

Ferment occurred in stainless, with temperature monitored to ensure a controlled ferment with a focus on this varietal single vineyard.

Open pump overs twice daily. A natural strain of MLF bacteria was introduced post yeast inoculation in order to bed the wine down for early release. Pressing occurred at dryness the wine was racked off gross lees and bedded down for 2 months with 15% of the wine being exposed to older oak for structure and balance while ensuring the berry flavours could sing
