Tasting notes from the winery for Eye Chart Preservative Free Organic Chardonnay 2019

The colour plays a lesser role in assessing PF white wines. The nose has a dominant initial smack of spiced pear and a touch of baked apple with an underlying aroma of honeysuckle and nuttiness. Flavours in the mouth are very inviting highlighted by dried nectarine characters. The fruit characters give a perception of sweetness from the intense fruit flavour although the wine is dry. Enjoy while fresh and vibrant with friends or with savoury foods.

Winemaking:
We have now been making PF wines for 5 vintages. We have learnt a lot along the way. The key to making PF wine is to start with great fruit and 2019 was exceptional. We made sure we used Mother Nature to our advantage. The fruit was harvested just
prior to daybreak on a morning with 12 degree temps. The fruit was harvested on the 24th of February and the wine was tipped into the winery immediately. Only free run juice was used in the making of this wine, this fractionation eliminated pressings juice which is not conducive to this style of wine. The ferment was managed as per our standard ferment program, but on this
occasion, we did take the opportunity to add oxygen to the ferment French style!

We didn’t stuff around with the wine post ferment, which we think is the key to maintaining freshness and fruit purity in PF whites. The wine was racked, filtered and bottled in a precise manner. The wine received no finings.
