The nose tempts you with citrus and baked apple. It initially hits your palate with juicy fruit; lime, apple and maybe a little pineapple, and a creamy texture with some ginger biscuit and mineral complexity.
This is small batch natural winemaking at it's best. 100% certified organic Chenin Blanc, from a small vineyard in Willyabrup sub region. Hand picked, whole bunch pressed straight to barrel for wild ferment. Battonaged (stirring of the yeast lees through the wine after fermentation) for three months leads to the wonderful textural palate of this wine. Racked and settled before bottling without fining or filtration. Right up there with Australia's best Chenin Blancs.
Certified organic Chenin Blanc from Willyabrup. Hand harvested, whole bunch pressed direct to season french barrels. Battonage for three months then racked to settle before bottling.
