Tasting Notes for Cullen Pet Nat Sparkling Rose Moon 2021 from the Winery 

This natural sparkling wine is created from 50.5% Semillon harvested on a flower day from Mangan Vineyard, and 49.5% Sauvignon Blanc harvested on a flower perigee day from 1976 plantings at Cullen Vineyard. Both varieties had overnight skin contact before pressing. A long, cool, natural fermentation proceeded and was then hand bottling over three days, on a Rose Moon-Full Moon.

Colour: Rose gold

Bouquet: Dazzling array of tropical fruits, apples, peaches, grass, orange peel and mandarin.

Food: Bruny Island oysters, Rottnest Island kingfish ceviche

Palate: Vibrant lime and citrus, fresh doughy yeast. A supple palate finishing with clean and fresh acidity
