Winemaking

Made in the Traditional ‘PetNat’ way - Chardonnay juice was put into bottlle with no addittions to ferment and produce a naturally sparkling style full of refreshment.

Vintage 2021

It was considered a good vintage in Canowindra in 2021 much to the relief of vignerons. It was wetter than usual which was welcome after a number of drought years in Central NSW. Rain caused a few issues as did hail causing a delay in picking times. Organic growers enjoyed larger yields due to judicious vineyard management with larger bunch weights due to the abundance of rain. The vintage was fast with few delays between varieties being picked.
