This wine displays the characteristic rich middle palate of its predecessors. At the time of writing the youthful edges were yet to integrate fully with the complex flavours and textures which is growing within the body of the wine. This integration should come about soon and development will continue for several years hence. The minerality and warm spiciness will combine with the sweet, wild berry and forest floor characters to produce a silky textured wine with a degree of opulence.
The wines are made on site using small open ferementers, wild yeast and no preservative. They are basket pressed and matured in small oak casks for at least 30 months - fining or filtration is not necessary. The wine is bottle aged in their cellar prior to release when it is ready for consumption.
