This deep garnet hued Cabernet Sauvignon exhibits a fine and soft bouquet of cedar and powdered minerals. It has the firmness and tautness to develop over several years allowing the underlying flavours to mature and gain further complexity. Warm earthy characters combined with sweet fruit essences ripple across the palate and linger on a long finish.
The wines are made on site using small open ferementers, wild yeast and no preservative. They are basket pressed and matured in small oak casks for at least 30 months - fining or filtration is not necessary. The wine is bottle aged in their cellar prior to release when it is ready for consumption.
