Outrageously bright and bubbly, the Nat Daddy is fruity, frothy, fun. Think, heady spice from the Shiraz, and crunchy green fruit notes from the sauv blanc. Clean as a whistle, with zero adds, wild ferment, and undisgorged. Chill, pop, and get the party started.
2021 Vintage
86% Sauvignon Blanc Shepherd’s Hut Vineyard Porongurup.
14% Shiraz Zarephath Vineyard Porongurup.
Sauvignon Blanc was destemmed to a few hours on skins before being pressed to tank with no pressings cut, and settled overnight before racking off gross solids.
Shiraz was crushed to tank for 24 hours before juice was drained off skins.
The two varieties were co-fermented.
100% wild fermentation with no additives of any kind.
The wine was bottled at the end of its single fermentation to complete in bottle for fizzy deliciousness.
The wine is undisgorged.
