Picked on the same day, destemmed to a few hours on skins before being pressed to tank with no pressings cut, and settled overnight before racking off gross solids.

The two varieties were co-fermented.
100% wild fermentation with no additives of any kind.
The wine was bottled at the end of its single fermentation to complete in bottle for fizzy deliciousness.
